Apple Cider Mignonette

INGREDIENTS
2 T apple cider
1 T shallot, finely chopped
1 T granny smith apple, finely chopped
1 T apple cider vinegar
fresh ground pepper to taste
PREPARATION
In a small pan, over low heat, combine the cider and shallots and apple and cook 5 minutes. Remove from heat and cool to room temp. Stir in the vinegar and season with pepper.
